There are many reasons why performers might require a demonstration recording or demo. It might be for self-promotion, to try and get representation by an agent, for entry to a competition or simply to get a taste of the recording experience.
In order to get your song noticed by producers, publishers and record companies, producing a good demo is the ticket. Unless they have the opportunity to hear your music in person, that may be the only way to get recorded.
